In fact, it's not all that uncommon for lovers of sweets to eat a light meal just so they can save plenty of room for dessert. Of course, you can spend weeks and weeks in a new locale and never try anything new from the kitchen, but where's the fun in that? When you're on holiday in Mexico, you might find it worth your while to sample the local cuisine, and you can start by trying out the special dishes created in the kitchens of most vacation rentals in Puerto Vallarta. And what the heck – you're on vacation, so you might as well start with dessert. One of the most popular dessert dishes in Mexico is a lovely, light custard or crème caramel called flan. It's fairly easy to make with simple ingredients, including eggs, milk, vanilla and sugar (those healthy parts might actually help you to convince yourself that this yummy treat is in reality quite good for you). Caramelized sugar in the bottom of the pan creates a tasty caramel glaze over the confection when it comes out of its pan.

If you're experimenting with a flan of your own, experienced cooks have a couple of tips to share with you. First, you bake this dish in a hot water bath, and it's a good idea to use boiling water in the bath so you don't waste baking time heating up water. Cover the baking dish with foil to keep your flan from forming a chewy skin on top. And if you can keep folks out of it, let the flan sit and cool for a few hours so the flavor can develop. Don't worry if custard doesn't float your boat; flan isn't the only traditional Mexican dessert you can request when you stay in vacation rentals in Puerto Vallarta. Many people enjoy a chilled slice of tres leches (three milks) cake (more eggs, milk and sugar covered in a sweetened milk syrup). The lactose intolerant might want to go with something else, perhaps the humble churro, nothing more than strips of deep fried pastry, rolled in sugar and cinnamon.
